Quick Summer Salad

It’s been a long time since I added a recipe so I thought I’d rectify it.

I love food

I love simple food

I love good, simple, healthy food.

This recipe will take longer for me to write it out than it will to actually serve it up – I promise. Well, it will if you know how to take some spinach leaves out of a packet and poach an egg.

My simple, healthy, good and tasty Salad.

Ingredients

Baby spinach leaves

Eggs – 1per person , poached.

Smoked bacon – cut into small pieces

Walnut pieces

Avocado – optional but good.

Method

Wash spinach and put on a plate.

Dry fry bacon ( no need to add fat to the pan) then pop in oven on low heat to keep warm

Put some walnut pieces onto spinach leaves

Make vinaigrette – Teaspoon of mustard, dash wine vinegar and double the amount of olive oil – mix

Get bacon bits out of the oven and decorate over the spinach and walnuts. If you are having avocado too slice it at this point and add to the plate.

Place poached eggs on top of leaves and drizzle over the salad. Season with black pepper.

Serve straight away with some crusty bread.
